What do you do in the winter, when most plants are dormant?

With a cheap cold frame you should be able to extend the season and get stuff into the ground Feb - Oct in most zones! The aim is to send stuff out based on the season, so most months out of the year you can plant what you receive right away. But the Nov, Dec, Jan months of winter are kind of tricky, so we send out seeds that need a cold period of stratification or seeds that can be grown indoors or under cover. So lettuces, asian greens, microgreens, and stuff to stratify (trees, lavender, strawberries).
